Good morning! Today we are sharing three quick, no-bake, make-ahead breakfasts that you can grab when you are on the go. If you know you are going to be busy or rushed on a particular day (or days), then opt for one of the options below so you have something to eat. Of course, you can always prep any recipe from your nutrition plan, like the sweet potato quinoa breakfast bites, pancakes or any muffin recipe, freeze them, and then quickly heat when you are ready to go.

Overnight oats

Overnight oats are one of the best grab n’ go breakfasts you can have! No matter how rushed you are, you can still enjoy a filling breakfast with overnight oats. Chia Pudding

No-Bake Date Breakfast Bars

Last but not least, we love a good no-bake bar! These bars are definitely for those with a little sweet tooth, and they can be enjoyed as an on-the-go snack too. Feel free to swap out some of the dried fruit if you have a favorite.

Ingredients:
-1 cup dates, pitted
-1/2 cup whole grain oats
-1/2 cup Brazil nuts (or almonds or walnuts, but try Brazil – great flavor)
-1 scoop plant-based protein powder (or 2 tbsp. flax meal), optional
-1⁄4 cup craisins
-1⁄4 cup dried mango or pineapple pieces (no sugar added – pineapple if you want more sweet, mango for less sweet)
-1 tbsp. chia seeds

Directions:
Toss all ingredients into a food processor and pulse to break up into a crumble. Then process until the mixture comes together (this will take a couple of minutes). Continue until the mixture is slightly sticky, or add 1 to 2 tbsp. of water to help the process along. Note that the mixture will still be a little crumbly, but if it sticks together in your hands, then it’s good to go!

Scoop the mixture into a 5×7 baking dish (or just a small square/rectangle dish) and press down evenly. Cover and refrigerate for at least 30 minutes. You can also roll the mixture into little balls instead of bars and have them as a quick grab and go bite!
