Instead of the grinch carving up the roast beast this year, lets have him take a stab at this simple, plant-based, cauliflower crown roast!

Whether you tend to eat cauliflower or not, this is one recipe that you must try! Roasting cauliflower creates a melt-in-your-mouth texture and delicious taste, so much so, that we often use this meal as our “go to” when serving meat eaters – and they love it! Plus, it looks fancy, but really just entails throwing some veggies in the oven and letting them cook.


Cauliflower Crown Roast

-1 head cauliflower
-Optional pinch each of parsley, rosemary, thyme and sage
-1 cup vegetable broth (plus more if needed)
-1 serving plant-based gravy recipe (see below – takes mere minutes to make)

Optional veggies/sides:
-2 to 3 stalks of celery, chopped
-1 cup of chopped carrots
-1 cup diced potatoes
-1 onion, sliced
-1 cup roasted and peeled chestnuts (our favorite this time of year)

Preheat oven to 425 degrees F.

Slice the bottom stem off of your cauliflower and remove any leaves. Place the cauliflower head in an oven safe casserole dish or deep pan and season with herbs. Then, pour in the vegetable broth, cover the pan with a lid, and roast in the oven for 25 minutes.

After 25 minutes, remove the lid from the pan, and add any vegetables that you would like to the pan. Then, spoon a little gravy over the top of the cauliflower and return to the oven to cook for an additional 25-30 minutes, or until a fork easily pierces through the cauliflower. The cauliflower should be very tender.

Remove from the oven, top off with some more gravy, and enjoy!

**NOTE, this meal goes quick in our house! We always double the recipe to make two cauliflower roasts and enjoy the leftovers as lunch.

Gravy Recipe

-1/4 cup brown rice flour
-2 cups vegetable broth
-1 tbsp. tamari
-1 to 2 tbsp. nutritional yeast (optional)
-Salt, pepper and parsley to taste

Pour all ingredients into a pan and whisk together on medium-high heat. Continue whisking until the mixture bubbles and thickens. If the mixture becomes too thick to your liking, simply add more vegetable broth.
