Cinco de Mayo is this week!

And to celebrate, we’re bringing you these Cucumber Guac Rafts!

We absolutely love guacamole, but it is not always the healthiest treat when you add in chips or too much salt. That’s why we’re giving it a Fairburn it Off twist, by adding cucumbers for crunch instead of chips.

These rafts are a great party appetizer or for munching on as a snack!

Cucumber Guac Rafts

Ingredients:
-1 ripe avocado
-2 tablespoons purple onion, diced, or 1 to 2 teaspoons onion powder
-1/2 tablespoon chopped cilantro
-2 teaspoons lime juice
-Pinch each of salt, pepper, and cumin (optional)
-1 roma tomato, diced
-1 cucumber, washed and sliced

Directions:
In a bowl, mash the avocado. Mix in the onion, cilantro, lime juice, salt, pepper, and cumin. Then add in the diced tomatoes until just combined.

Using a spoon, scoop out a little guac and place on top of a cucumber slice until all slices are topped. Serve immediately. If making in advance, store guac in the refrigerator and wait until serving to spoon out on top of cucumber slices.
