Fall is underway, which means chillier weather and comfort foods. However, just because the sun is setting earlier and the air a little crisper, does not mean that your comfort foods have to hurt your health and progress. Rather, find ways to utilize fall foods, like apples, pumpkins, squash, root vegetables, and so on, into healthier meals. Today, we are sharing a fall recipe from your nutrition plan, that you can make for breakfast or as a healthy snack! You can make the entire recipe in advance and grab and go as needed, or just make the base in advance, and the topping when ready to eat – it’s up to you!

Apple Crumble Chia Pudding

Ingredients (Makes 2):
-1 cup vanilla almond milk
-1 tbsp. maple syrup
-1/4 cup chia seeds
-Splash of vanilla extract

Topping (for 2):
-1/4 cup oats
-2 tbsp. almond flour
-1 tbsp. maple syrup
-Pinch of cinnamon
-1 apple, diced

In a bowl, whisk together all of the ingredients until the chia seeds are fully incorporated. Cover and refrigerate for at least 30 minutes. Remove bowl from the refrigerator and divide into individual ramekins. If the chia pudding is too loose or too thick, you can add either an extra tbsp. of chia seeds to thicken, or a tbsp. of milk at a time to loosen.

For the topping, divide apple chunks amongst the two puddings. In a bowl, mix together the oats, almond flour, cinnamon, and maple syrup until just combined. Spoon crumble mixture over apples and enjoy.

Optional: If you want a warm topping, heat the apples and crumble mixture together in a pan for a couple of minutes to give them a golden sear, and then pour on top of your chia puddings.
