We are so excited that warmer weather is finally here! And with Memorial Day Weekend coming up, we are sharing a recipe that is being featured from the brand new (yet to be released) summer nutrition plan!

These donuts are not only plant-based, but they are super easy to make and can be made plain or with a glaze for a little extra treat! We love having a couple of these with coffee, but you can also enjoy one or two as a snack or dessert.

Berry Breakfast Donuts

Ingredients:
-1/2 cup oat flour
-1/2 cup spelt flour (or sub 1/4 cup plant protein powder and 1/4 cup spelt)
-1 tsp. cinnamon
-1 tsp. baking powder
-Pinch of sea salt
-5 tbsp. unsweetened almond milk, or other non-dairy milk
-1/4 cup maple syrup
-1 flax egg (1 tbsp. flax meal mixed with 3 tbsp. water)
-1 tsp. vanilla extract
-2 strawberries or handful of berries chopped

Optional Glaze Topping:
-1 strawberry mashed
-Powdered sugar
-Unsweetened almond or other non-dairy milk

Directions:
Preheat the oven to 350 degrees F. In a bowl, mix together all of the dry ingredients. Then add in all wet ingredients. Once everything is combined, mix in your chopped strawberries.

Lightly spray a donut pan with non-stick spray, and fill each donut mold with the batter. The batter will be a little sticky, so you will need to use a spoon to help fill it in. Once all of the batter is in the donut pan, bake in the oven for 12-15 minutes. Once done, remove from the oven and let cool in the pan for a couple of minutes before removing to finish cooling on a wire rack.

If using a glaze topping, mash a strawberry in a bowl. Add just a little powdered sugar a tablespoon at a time, and then add in a splash of non-dairy milk. Mix together until the glaze is a consistency that you like. If you like it thicker, use less milk, thinner, use more. Dip each donut in the glaze and allow the glaze to dry.

Then, dig in and enjoy!
