Valentine’s Day is just over a week away, so we are sharing one of our favorite desserts (okay, we eat these for breakfast too, lets be real) with you!

Growing up my mom and I used to make Magic Cookie Bars all of the time. It was a layer cookie made up of graham cracker crumbs, chocolate and sometimes butterscotch chips, nuts, coconut, and of course, an entire can of sweetened condensed milk. However, since an entire can of condensed milk is not exactly a food group, I decided to create my own, much healthier, version of these cookies. I hope you enjoy (p.s. – once you make these, play with some of the flavors or nuts that you enjoy).

Magic Cookie Bars

Ingredients:
-1 cup of whole grain or GF oats, can leave whole or lightly pulse in a blender
-1 ripe banana, mashed (1/3 cup of applesauce can be subbed)
-1 flax egg (1 tbsp. flaxseed meal mixed with 3 tbsp. water)
-2 tbsp. flaxseed meal
-1/3 cup softened almond butter
-1/4 cup maple syrup or honey
-1/4 cup dark chocolate chunks (optional, we like the vegan Enjoy Life chips)
-2 tbsp. coconut oil

Toppings (all optional):
-1/4 cup chocolate chunks
-1/4 cup crushed nuts like pecans and/or walnuts
-1/4 cup shredded unsweetened coconut (can also use coconut chips)
*You could also try dried fruit, chopped almonds, etc.

Directions:
Preheat your oven to 350 degrees F.  Lightly grease (or line with parchment paper) an 8×8 baking dish and set aside. Then, in a bowl, mix together the oats,mashed banana, flax egg, flax seed meal, almond butter, maple syrup, coconut oil, and chocolate chunks.

Spoon the batter into your prepared baking dish, and then evenly sprinkle on all of your topping ingredients over the top of the oat mixture.

Bake in the oven for 20-25 minutes, or until edges are golden brown. Let cool completely before cutting and serving (although we never fully make it before cutting in). Happy eating!
