Today we are featuring a simple-to-make salsa recipe that is a refreshing addition to any meal! You can use this salsa over grilled veggies, cauliflower steaks, and of course with some blue corn chips.
This recipe makes approximately 6-8 servings, but feel free to double or reduce down as needed.
-2 large, ripe mangos, peeled
-1 medium red bell pepper, chopped
-1 jalapeno (optional), chopped
-3 scallions, chopped
-2 tbsp. cilantro
-3 tbsp. lime juice
Chop the mangos into small chunks and place in a mixing bowl. Then, mix in the peppers, scallions and cilantro. Add the lime juice, mix all ingredients together and enjoy!
*Note, you can leave this as a chunky salsa or puree everything together in a blender or food processor until smooth. Depending on your blender, you may need to add a little water or a little more lime juice to get everything nice and smooth.
