Happy hump day!

Today we are give you a sneak peak into a recipe that will be coming out in your new nutrition plan! This simple, no-bake, 4 ingredient mousse recipe (or maybe you’d call it a pudding?) is so rich and delicious. And since it is so easy to make, we may or may not be making it weekly…

Chocolate Mousse

Ingredients:
-1 10 oz. package of silken tofu, drained*
-1 10-12 oz. bag of vegan chocolate chips, melted (Enjoy Life brand is the one we use, or 70% or higher dark chocolate)
-1 tbsp. vanilla extract
-2 to 4 tbsp. maple syrup

Directions:
Blend all ingredients together in a food processor, pour into a bowl, cover, and refrigerate. Let chill in the fridge for at least an hour (although you can dig in sooner), and enjoy!

Optional ways to make this: Add a pinch of sea salt OR a splash of orange liquor! You can also pour this into a prepared chocolate cookie crust for a little extra indulgence, or use any of the crust recipes from your nutrition plan.

*Note: It is very helpful to drain your tofu beforehand. Since it is silken tofu and can break up easily, you can dump it out onto a paper towel and place another paper towel on top. Then put something heavy (like a pan) on top to help push and drain the liquid out of the tofu.
