St. Patrick’s Day is only a few days away, so we are celebrating with some healthy – and of course, green – recipes! And you will never guess what one of the main ingredients is in the muffins… let’s just say it is a great way to get in your protein, greens, and fiber!

Spinach Surprise Muffins

-3/4 cup oats
-2 cups spinach (you do not have to stuff your cups – just as long as you have around 2 lightly packed cups, you will be good)
-1/2 cup chickpeas
-1/2 of a banana or 1 package (about 1/3 cup) plain applesauce
-5 tbsp. maple syrup
-2 tbsp. flax meal
-1 tsp. vanilla
-2 tsp. baking powder
-1 tsp. baking soda
-1/2 tsp. salt

Preheat your oven to 350 degrees F, and lightly spray a muffin tin (we use coconut oil spray) with non-stick spray.

In a food processor or high speed blender, combine all ingredients. Blend until everything is combined and mostly smooth. Fill muffin tins about half way with batter, and continue until all of the batter is used. Bake in the oven for 20-25 minutes, or until the edges start to turn golden and the tops of the muffins bounce back when you lightly tap them. Let cool in the tin for a couple of minutes before moving to a wire rack to finish cooling. Makes 10-12 muffins.


Erin Go Bragh Smoothie

-1 orange, juiced
-1/4 cup coconut or almond milk, plus more as needed
-1/2 frozen banana slices (slice the half of banana before freezing)
-2 cups of spinach and/or kale
-1/2 of a cucumber, sliced
-1 to 2 tablespoons fresh parsley (optional – but if you have fresh parsley, this is great)
-1 scoop plant protein powder (optional)
-5 ice cubes (if you omit the ice cubes and protein, you will have a great green juice option)

You can make this a chocolate mint smoothie by adding a scoop of chocolate protein powder or a 1/2 tablespoon of dark cocoa powder and a splash of peppermint extract. 

Blend all ingredients together until smooth. Enjoy!


Tropical Vibes Green Smoothie

Want to channel summer while you celebrate St. Patrick’s Day? Then this recipe is for you!

-1 cup coconut water
-1/2 sliced frozen banana
-1/2 cup frozen mango chunks
-3 to 4 pieces of frozen pineapple chunks
-1 tbsp. chia seed (or 1 scoop plant protein powder)
-2 cups lightly packed spinach
-Optional: add in a 1/2 teaspoon of ground ginger (or more if you like the flavor)

Blend all ingredients together, pour in a glass and enjoy! You can even make this a smoothie bowl and top with some additional fruit, unsweetened coconut, a couple tablespoons of David’s Homemade Granola, and/or a drizzle of honey!
