Halloween is one of our favorite times of the year! We love to dress up, indulge in some treats, and get creative in the kitchen! This year, we are sharing TWO new recipes from the Nutrition Plan, that can be combined to make a delicious halloween treat! No-Bake Dirt Cake
Chocolate Mousse Cake Layer
-1 10 oz. package of silken tofu, drained*
-1 10-12 oz. bag of vegan chocolate chips, melted (Enjoy Life brand is the one we use, or 70% or higher dark chocolate)
-1 tbsp. vanilla extract
-2 to 4 tbsp. maple syrup
Blend all ingredients together in a food processor, pour into a bowl, cover, and refrigerate. Let chill in the fridge for at least an hour for a more set and firm cake (although you can dig in sooner), and enjoy!
*Helpful note: It is very helpful to drain your tofu beforehand. Since it is silken tofu and can break up easily, you can dump it out onto a paper towel and place another paper towel on top. Then put something heavy (like a pan) on top to help push and drain the liquid out of the tofu.
Brownie Crumble “Dirt” Layer
-2 cup walnuts (can sub almonds or combo of both)
-1 cup pitted dates
-1/4 cup cacao powder
-1 tsp. vanilla extract
-1/2 tsp. sea salt
Place dates in a food processor and begin to pulse to break them up. Then add in all remaining ingredients and blend until the mixture becomes crumbly. Sprinkle the crumble over your mousse and dig in! You can even top with your favorite ghost cookies or other spooky treats.
*If not eating right away, simply wrap and refrigerate
