Halloween is just around the corner, so get your wands and conjure up this delicious, sweet, and healthier juice recipe!
If you crave sweets or pumpkin (or both) this time of year, this juice recipe is a great way to help curb those cravings. Warning: Muggles, especially muggle children, will flock to this juice and will want to know your secret for satisfying the sweet tooth!
-10 apricots, covered and soaked in 2 cups of water for 3 or more hours
-1/2 cup pumpkin puree
-1 tsp. vanilla extract
-2 tsp. ground ginger
-1/2 tsp. ground allspice
-1/4 tsp. nutmeg
-1 1/2 cups pure apple cider or pure apple juice
-1 cinnamon stick
Make sure you soak the apricots for a few hours, or overnight in your refrigerator. When ready, pour the apricots and water into a food processor (or good blender), and blend until smooth. This may take a few minutes to make sure all of the apricot pieces break up and become smooth. Then add in the pumpkin puree, vanilla, ginger, allspice, and nutmeg, and blend. Set aside.
In a small to medium sized saucepan, heat your apple cider and cinnamon stick to a simmer for about 10 minutes. Remove the cinnamon stick and pour the cider into the blender with your apricot mixture. Blend again until smooth.
Pour your juice through a mesh strainer into a bowl or large pitcher so that only the juice comes through and any remaining pumpkin pulp or pieces do not get into the drink. Serve as is or chill in the refrigerator before serving.
