Happy Fairburnin’ Friday!

Summer is only a few days away, so we are celebrating with this refreshing and hydrating “lemonade” that was inspired from a lemonade stand in Hawaii that we visited.. a lot!

Don’t be fooled or put off by the basil either – it is such a great addition and just may surprise you!

Watermelon Basil Lemonade

-1/2 of a large watermelon (seedless), diced
-2 cups basil (do not need to pack the cups – just loosely fill)
-1 lemon, juiced (optional)

Divide basil evenly between two glasses. Muddle lightly and set aside.

In a blender, toss in all of the watermelon and puree. You are not adding any liquid, so you may need to pulse your blender a few times. Once the watermelon starts to blend you will be golden, as it will liquify very easily.

Once the watermelon is liquid, pour the juice through a sieve into a bowl. You may need to do this twice to make sure all of the pulp and leftover chunks are gone. Pour liquid back into blender (easier for pouring), and taste. If you like the watermelon juice by itself, then do not add the lemon juice. However, if you want to add the lemon juice, pour it in and pulse a couple of times to blend.

Pour the juice over the basil in the glasses and enjoy!
