Recipe: Peanut Butter Oat Bars

Happy Fairburnin’ Friday!

To kick off the weekend we are whipping up a batch of easy-to-make Peanut Butter Oat Bars. These bars are great for when you are on the go, as a snack, or perfect for when you may be traveling and need a healthy bite.


Peanut Butter Oat Bars

-1/3 cup pure peanut butter, unsalted (only ingredient should be peanuts)
-1/3 cup maple syrup
-1 tablespoon melted coconut oil
-1 teaspoon vanilla
-1 scoop plain or vanilla plant protein powder
-1 1/2 cups whole grain oats
Preheat the oven to 350 degrees F. In a bowl, mix together the peanut butter, maple syrup, coconut oil, and vanilla. Once combined, mix in the protein powder and oats until all ingredients are mixed together.

Line a 5×7 (8×8 is fine too for a little thinner bar) baking dish with parchment paper or spray with cooking spray. Using a spatula or just your hands, pat the oat mixture down into the baking dish until the entire bottom is covered and evened out. Place in the preheated oven and bake for 20 minutes, or until the edges are golden brown.Let the bars cool in the dish slightly before cutting and enjoying!
