To kick off the weekend we are whipping up a batch of easy-to-make Peanut Butter Oat Bars. These bars are great for when you are on the go, as a snack, or perfect for when you may be traveling and need a healthy bite.
Peanut Butter Oat Bars
-1/3 cup maple syrup
-1 tablespoon melted coconut oil
-1 teaspoon vanilla
-1 1/2 cups whole grain oats
Line a 5×7 (8×8 is fine too for a little thinner bar) baking dish with parchment paper or spray with cooking spray. Using a spatula or just your hands, pat the oat mixture down into the baking dish until the entire bottom is covered and evened out. Place in the preheated oven and bake for 20 minutes, or until the edges are golden brown.Let the bars cool in the dish slightly before cutting and enjoying!
